Every year, we test 300 varieties of wheat to find and select the best ones, the ones that will produce the most authentic and tasty breads, the ones that are most resistant to disease and therefore require the fewest treatments.
After harvesting, we develop the most balanced blends using very specific pure varieties to obtain high-quality flours with optimum regularity.
To produce our flours, we ensure quality throughout the production chain by carrying out controls on receipt, at various stages of the milling process and on the finished product. We test both the physicochemical and bread-making quality of our flours.
We can offer you a range of different techniques for producing flours on cylinders and millstones. Millstone milling preserves the noble elements of wheat, preserving all its taste and nutritional qualities.
